You could certainly have a card counter, that you could use to assist with knowing what cards you've seen. But there is no way for someone to know what cards are coming other than odds.
The client itself (your game) doesn't know until the sever reveals them. The only cards that are even sent to your client are the ones you can see already.
thats to say, the cards that are not face up for you, don't actually have anything on the other side of them
We actually thought about that kinda stuff in the beginning of our multiplayer games.
